Our darling Krista is not only a beautiful, sexy woman but is also our Official Sugar Shaker, winner of Food Network “Cupcake Wars!” and the first person ever hired at Sweet Cheeks Baking Co. – the original TEAM CHEEKS member!   Krista LOVES games, is incredibly fit, and is the ultimate challenger… so it’s not surprising that when Mike got down on one knee in Jackson Hole, WY, it was during a ski vacation that Krista WON while competing on “WHEEL OF FORTUNE”…woo hoo!!!

Clients who write us exceptional “Thank-You” notes truly make our jobs worth every moment of stress, time, labor, and attention to detail.  Kelly & William, married at the urban-cool setting of The Bristol Hotel in downtown San Diego, just sent us the most wonderful letter, just one week shy of their 1-year anniversary.  We don’t normally share self-congratulatory posts like this, but she really did make a rainy day shine today, with her note and with these gorgeous images of their love together!  Thank you, Kelly for this letter!

“Hi Sweetcheeks!
 
It’s been almost a year now since our wedding and I never actually reached out to THANK YOU for your unbelievable cake!! It was STUNNING, it was more than I dreamed of, and it truly – besides the whole marriage part – was my absolute favorite piece of the whole wedding weekend. (So much so that I had several pieces of it, haha) Our photographer has done 400+ weddings and he told us that your cake was without a doubt in the top 5 wedding cakes he has ever photographed. It was PERFECTION. (So perfect, in fact, that father of the bride thought it was an exquisite present throughout the whole event instead of the cake, and a group of friends was so convinced that it was fake – because the edges were too perfect – that one of them got the courage to swipe the back of it to see, then turned in a panic to the rest of them with her frosting finger! They made a pact not to tell us until later 🙂 )
 
Your cake was also so incredibly yummy that we decided to eat the top tier so we could enjoy it without freezer burn! So I’m wondering if we can order the top again for our 1 year anniversary coming up?? 
 
The date is January 19th. It was the Red Velvet with cream cheese filling. We live in Madison, WI so it will include shipping. I hope I’m giving you enough notice? Let me know if this is doable!

Kelly ordered her cake from her home in Madison, WI, so it was all up to us to make sure we captured her perfect design, color, & flavor – sight unseen!  (gulp)  Our Sweet Cheeks Baking team knocked it out of the park by baking super-moist Red Velvet Cake and layering all tiers with our Silky Cream Cheese Filling and Italian Butter Cream Icing with crisp corner edging.  Sooooo yummy!

The wedding planner’s latest stress of the event:  “Oh NO, the cake is melting!  Quick, cut it now for photos, even if the guests won’t get to see it!!”

Have you thought about how to protect your guests, your food, your flowers, your makeup?
Follow us on our Tips to Remember as you plan your special day.

This week’s Tip #2 – Cakes are People Too!

MELTED cake…what a mess!  Whether you’re serving mini desserts or a tiered (wedding or other) cake, unless you order an all-fake cake, these items are PERISHABLE and need protection.

Discuss cake with your wedding professionals:

1. Here’s how to know how long a Real Butter Cream cake (or WORSE, cupcakes frosted in cream cheese) will last in direct sun:  put a stick of butter outside on a plate in approximately the same location that you plan to display your cake….Check back with it in 2 hours and see how it looks.

2.  “But we aren’t cutting the cake until 9pm…”  (the average sunset time in peak wedding season is 7:25pm; the average time guests arrive to receptions is between 5:30-6:00pm; the cake company may need some setup time prior to guest arrival). Do you want your cake being setup during dinner?

3. We won’t need a tent; it never rains in San Diego in the summer…(famous last words).

Air conditioning is cake’s best friend in the summer months. Most venues are not comfortable with storing a cake in their walk-in refrigerator and taking it out to display themselves – too much at risk if they drop it! We find that the fast-paced staff in some restaurant locations will grab a 2-3 tier cake and whisk it away for refrigeration without incident. (in San Diego, we applaud The Bluewater Boathouse for their agility & comfort with this!) .  On the contrary, most caterers or venues will not offer this option. Our most helpful hotel property who is willing to keep a 3-tier cake in the fridge on a hot day is the elite ocean view hotel L’Auberge Del Mar…thanks Catering team!  This helps us and the clients on a sweltering evening when needed.

No cake designer wants to see an unknown caller on their cell phone at 8pm…worried that the dreaded disaster may have struck: a cake has melted or fallen over due to the heat!

This is THE WORST news to hear, especially when the venue is too far away for us to make any reparations.

At Sweet Cheeks Baking Co. we require clients to provide indoor shelter, shade, or solid roof tent (YES, that clear tent is WAY COOL…and totally acts as a steam room on a hot day), or we require a signed waiver to offset the potential hazards.  With up to 15 cakes on a Saturday, we just couldn’t logistically run around town scooping up melted butter rivers from the cake table floor and fixing cakes during receptions.

Think about it: would you ever consider leaving out your tuna fish salad for 5 hours at a picnic?

Outdoor weddings are stunningly beautiful, but BE SMART when planning, and listen to the pros you’ve hired.

Ahh, we all LOVE our beach and our beautiful SUNSHINE here in San Diego!  Newscasters have it easy here, temps average 70-80 degrees with little chance of rain or otherwise.

However… there we were, again in mid-September, with OVER 100-DEGREES hitting the thermostats inside and out, causing harm to our favorite delectable condiment:  BUTTER CREAM!  But wait, the cake is only one of your worries… What about the GUESTS?  The guys wearing JACKETS???  Yikes. Get that guy a beverage fast!

We’ll start a list of tips to help while planning your SUMMERTIME parties… remember these things if you opt to get married in a potentially HOT venue without excellent shade or air conditioning:

Tip #1 – First & foremost:  Your Guests.  Provide the following to show that you care about them:

:: CHAIRS: even if you’re on a BEACH, if you have ELDERLY or DISABLED GUESTS, please bring folding chairs at least for these guests (it’s tough enough that they just required assistance to noodle down the beach with their walker)..

:: Large hand-pump SUNSCREEN bottles (or minis handed to each guest upon arrival).  Photographers will thank you too – think of the money you’ll save if they don’t have to Photoshop out all of the 1/2-faced sunburns!  Thanks for this tip from our Beach Wedding Photography Expert, Lisa G at Elle G Photography!

:: PARASOLS to protect your fair-skinned friends from sunburn during your beautifully sun-blazing ceremony (and they’re a beautiful way to add to your party’s style)

:: Personalized WATER bottles (FUN!!!… and life saving).  Tons of companies online sell custom label bottles with your monogram, photo, or “Thank You for Joining Us!” note . Yes, provide one for your officiant too.

:: Refreshing Non-Alcoholic Beverages at the Outdoor Ceremony – Inspired by our dear friend Carmin Cermak of Carmin Design, who makes a mean N/A SANGRIA loaded with sliced fresh fruits, sparkling water, & a touch of juice!  A delicious conversation starter at the punch table (keep it covered to avoid bees).  You can add the Tequila later… 😉

As 2013 comes to an end, and 2014 is practically upon us, we’d like to pause and reflect on some of the events and/or weddings that we may not have blogged about.

We have the best jobs, truly, and to be able to create wedding/special event cakes for those in San Diego (getting married) is an honor.  In particular, we love weddings! And, we definitely love cake.  So naturally, making cakes for weddings is one of our passions!  That kinds of reads like a lame SAT question, but some of the weddings that we have been a part of have been anything but lame!

We try to feature as many of the events that Sweet Cheeks takes part in, but at times, it’s difficult.  At times, it may be easiest to rely on the posts of our friends and fellow wedding vendors!  So in this post we will mention a couple special weddings that sum up the success that 2013 was for us!

Del Mar Wedding

This adorable couple used San Diego as a destination wedding location.  Manny + Nicki are from Houston, Texas, and in this gorgeous wedding at L’Auberge in Del Mar, seaside style was the focus: think pastel colors, starfish details, and an outdoor setting with the sound of the wave crashing.  Visit the blogs of both the Floral Designer, Jennifer Cole Florals, and the Photographer, Archetype Studio, Inc., respectively, for amazing images

 

Liz + Alex:

Liz + Alex, Arizona-based, also used San Diego as a destination wedding location, yet for this adorable couple, they opted for the simplicity of the San Diego Rowing Club as their reception location.  Their wedding had sea-inspired elements, yet their colors were vibrant, and their details more DIY.  Yet, do not mistake DIY as less elegant.  This wedding was so well thought out and so beautifully decorate that Exquisite Weddings Magazine featured it on their blog, and that is no easy feat!

Q + A – Insight into how a baker prepares for her own wedding!

We connect with most of our brides, but when we have an extra-special connection with one, well, it is pretty exciting!  This is the case for one of our special Sweet Cheeks bakers, Katrina!  Katrina recently got married to Sam, and as a wedding baker insider, we thought it would be interesting to hear from Katrina how it was planning her own wedding, specifically her wedding cake 🙂  Read on for details and for pics courtesy of E3 Photography….

San Diego Wedding

1) How long have you worked with Sweet Cheeks Baking Co.?

In early 2010, I did an internship at Sweet Cheeks Baking (SCBC) while I was attending the Art Institute of SD.  Upon graduation (months later), I got hired!  It has been almost 4 years & I can honestly say I get up every day & am excited to start my day!

2) As an insider to wedding cakes/baking, how was it planning your wedding desserts/cake?

Planning the dessert bar/cake was actually VERY difficult for us!!  Having worked around these delicious sweets for almost 4 years & always testing out new flavors, I had an overabundance of flavors that I wanted to incorporate into our cake.  I had endless options because I’ve SEEN & helped create them all.  Honestly, I truly think it would have been easier if I wasn’t an insider.  In some ways, I wish I had someone in the industry to lean on and give me advice as to what are a few exceptional flavor combos — this way I could have been done with it!  Too many flavor choices seem to confuse people more. Either way it was a BLAST taste testing!

3) You probably see a lot of requests and notice the trends with wedding cakes, so what did you want for your own?

I’m not going to lie… I like to keep up with trends!!  To me–things wouldn’t be trendy if they weren’t worth it. I was very much into the tiny ruffled ombre cake (faded yellow to white), which I had seen more & more of coming out of the bakery.  I also had a second cake (because who wants just ONE?!).  It was a very simple 3-tier cake in white, with gray & yellow chevron on the bottom tier.  It also had a tiny cluster of succulents towards the top of the cake.

4) Did you have any part in making your cake? Or did you let the others have at it?

I had much to do with how delicious the cake turned out… but had absolutely nothing to do with how aesthetically BEAUTIFUL the cake came out!!!!!  I’m a baker, not a decorator (huge difference).  I make the cake taste decadent & sweet, while our decor teams make the vision come to LIFE.

5) Any surprises from your coworkers?

My coworkers followed my “vision” to an absolute “T” (no surprises).  While there were no surprises for my wedding…. I can’t say the same for my sister’s wedding, which took place a couple years ago.  My big sister got married on my birthday & my Sweet Cheeks co-workers knew that.  So, waiting inside my hotel room, during my sister’s wedding, was a beautiful, little birthday cake ALL FOR ME 🙂 My coworkers had been planning that ever since they found out what day my sister’s wedding landed on!  So it ended up still being both our days!!

6) How did you meet your fiancé?

Sam & I knew each other for almost 4 years before we even started dating. He was my big bro’s friend 😉  They were not best friends, but they definitely hung around the same crowd.  We always saw each other at various get togethers, halloweens, birthday parties etc.  We talked at EVERY single event, & EVERY single time we made a “date” to hang out afterwards.  This girl right here (ME), cancelled every single time.  It wasn’t until one certain birthday party for my big bro that everything changed.  I saw Sam standing across the room & I looked at my mom and told her that I needed to be with him.  He captivated me — I was mesmerized.  I was afraid to walk up to the man that I had shamelessly turned down for the past 4 years.  Yet, I did, & he was just as sweet as the first time we’d talked.  At the end of the night I was sure he was going to ask me to hang out again… I was so ready this time…but as the night went on, he didn’t!!   I finally mustered up the courage to make the move & just ask him.  His response was, “are you ACTUALLY going to hang out with me this time?”  My face turned beet red — but as it turned out… we’ve been hanging out every day since!!

7) How did you pay for the wedding?

I was so very, very fortunate to have help from my father to pay for the wedding. “Help” is an understatement. He paid for the wedding — I helped, haha. My dad & I sat down, talked budget, & then I did some serious research. I made sure to fit his budget that he so generously allowed me. I did my very best & by golly, we were pretty darn close!! I think anyone can have a beautiful wedding on a budget if you just take the time to do the research & include some DIY projects! We would not have had the perfect wedding if it wasn’t for him–we are indebted! What he gave Sam & I will never be forgotten or taken for granted. The things I took care of were the centerpieces, all wedding decor, favors, frames, guestbooks, etc.

Pretty in Pink

Pink is such an elegant, classy color, especially for weddings.  So when we had a couple asked us for a cake that would tie in with their soft pink wedding color theme, we know we could make them happy.  The wedding took place at the lovely Estancia Resort in La Jolla, and the wedding cake, looked amazing against the backdrop of the Estancia’s romantic splendor.
